Winter Vegetable Casserole Recipe

You will need :-

8 oz. lean salt pork

1 lb. carrots

6 small onions

2 leeks

1 lb. small potatoes

1 tablespoon plain flour

sprig parsley

sprig thyme

1 bay leaf

salt and pepper

 

Cut the salt pork in small dice and brown in a heavy pan. If salt pork is unobtainable, use a thick piece of bacon, or use unsalted belly pork. Peel the carrots and cut in thick slices. Peel the onions but leave them whole. Trim the leeks, wash them very well and cut in thick slices. Peel the potatoes and cut into thick slices. Add the carrots, onions and leeks to the pork and cook together for 5 minutes. Stir in the flour, mix well and add hot water to cover. Cover tightly and simmer for 30 minutes. Add the potatoes with a good sprinkling of chopped parsley and thyme, and bay leaf. Season to taste, cover and simmer for 1 hour.
