Welsh Casserole Vegetables |

You will need :- 2 lb. potatoes 4 bacon rashers 2 large onions salt and pepper 1 oz. dripping 1 lb. broad beans
Oven Setting:- 350°F; Gas Mark 4
Peel the potatoes and cut them into equal-sized slices. Cover the bottom of a casserole with half the bacon, cut into pieces. Add layers of sliced potatoes and onions, finishing with potatoes, and seasoning each layer with salt and pepper. Put the dripping on top and enough water to just cover the vegetables. Cook in a moderate oven (350°F; Gas Mark 4) for 45 minutes. Add the beans and remaining bacon and continue cooking for 15 minutes. Remove the lid and cook for 10 minutes more to brown the potatoes.
