Vegetarian Chop Suey Recipe

You will need :-

3 tablespoons oil

½ head celery, diced

½ small cabbage, finely shredded

2 large onions, finely sliced

2 large carrots, cut into 5mm (¼ inch) rings

1 cup water or vegetable stock

½ teaspoon yeast extract

2 teaspoons light soy sauce

2 tablespoons corn flour

4 tablespoons water

salt

125g (4 oz.) bean sprouts, fresh or canned

 

Cooking Time:- 15-20 minutes

 

Set electric fry pan on moderately high heat, add oil to pan and when hot add celery, cabbage, onions and carrots and stir fry for 5 minutes. Add the water or stock and bring to boil. Reduce heat immediately and simmer vegetables for a further 5 minutes. Add yeast extract and soy sauce and stir well. Mix the corn flour with 4 tablespoons water, stir into the pan and cook for 3 minutes, season to taste, add the bean sprouts and cook for 2-3 more. Serve hot with plain boiled rice. Serves 4
