String Bean Parcel Recipe |

Allow 6-8 beans per serve, topped, tailed and strings removed 2 shallots salt and pepper to taste 1 tablespoon butter or margarine
Wash and drain beans. Cut four lengths of green shallot shoots, dip into boiling water for 1/2 minute to make them more pliable. Divide beans into four, tie each into a bundle using a shallot shoot. Spread 4 pieces of aluminum foil large enough to wrap each parcel, lay one bundle of beans on each, sprinkle lightly with salt and pepper and divide butter between parcels. Wrap beans loosely and secure well. Cook over a casserole, around a roast or in a moderately heated pan for given time.
