Do try this. It is one of my grandmother's specials. The trick is to serve it to anyone known to 'hate' swedes. When they are playing 'Oliver' and asking for more you may like to break the news.
250g (1/2 lb) yellow swede, peeled and cut into 1cm (1/2 inch) slices 1 teaspoon salt 500g (1 lb) potatoes, prepared as swedes 1-2 tablespoons butter or margarine salt and pepper to taste
Place swede in frying pan with salt and just enough water to cover. Bring to fast boil and adjust temperature to keep water just boiling. Cover and cook for 10 minutes. Add potatoes to pan, bring water back to boil, cover and cook until vegetables are tender. Strain and mash together. Add half the butter, salt and lashings of pepper, beat well until creamy. Melt remaining butter in pan on fairly high heat, return mashed swede mixture to pan and turn in the butter until crusty brown edges form. Serve very hot. Delicious.
Note: This is especially good with ham steaks and pork.
Serves 4-6 Cooking time: 30 minutes
