This is one of those very adaptable dishes. Serve it hot as a starter, cold and mixed with rice it makes an excellent salad. I like it hot with veal or a steak.
3 green peppers, seeded and cut into 1cm (1/2 inch) strips 3 red peppers, prepared as above 3 cups boiling water 60g (2 oz) butter or margarine 1 large onion, sliced 2 cloves garlic, crushed salt and black pepper to taste
Place peppers into bowl and pour boiling water over them, leave for 1 minute, then drain in a colander and run cold water over to stop further blanching. Shake dry and set aside. Melt butter in deep or shallow fry pan set on medium heat, add onion and garlic and sauté until onion is just softening. Add peppers, season well with salt and pepper, increase heat and cook, stirring constantly, until peppers are softened but still well colored.
Serves 4-6 Cooking time: 12-15 minutes
