Peas with Ham Recipe

I can happily make a meal of this alone, but it also goes particularly well with poultry and pork dishes.

 

30g (1 oz) butter or margarine

3-4 shallots, green and white parts cut into 1cm (1/2 inch) pieces

90g (3 oz) ham pieces, diced

250g (1/2 lb) fresh peas, shelled weight salt and pepper to taste

 

Set fry pan on low heat, melt butter and sauté shallots gently until softened but not coloured. Add ham and stir together with shallots for 1 minute. Add peas and stir them in pan until coated with butter or margarine, cover pan and cook with vent closed until peas are just tender. Give the pan a gentle shake from time to time. Do not season until cooked because the ham will certainly do some salting for you.

 

Note: Fresh peas are very much nicer in this dish but if you must use frozen peas, cut cooking time in half. The ingredients can also be parcel cooked for 20-25 minutes.
