Parcel Braised Celery Recipe

Celery is very neglected as a vegetable in its own right and is used mainly in soups, stews and salads, but it marries well with grills of meat and is a superb accompaniment for fish.

 

1/2 head celery, leaves removed and cut into 10-13cm (4-5 inch) lengths

1 tablespoon butter or margarine, divided into 4 pats

salt and freshly ground black pepper to taste

 

Lay equal quantities of celery on each piece of foil with a pat of butter, season with a little salt and plenty of pepper. Wrap and cook for time given.

 

Serves 4

Cooking time: 50-60 minutes

4 pieces aluminum foil
