Orchard Cauliflower Recipe

1 small or 1/2 large cauliflower, divided into florets

3 dessert apples, peeled, cored and cut into 1cm (1/2 inch) slices

90g (3 oz) butter or margarine

salt and pepper to taste

juice of 1 lemon

 

Parboil cauliflower in boiling salted water for 5-6 minutes or until just tender; it must still be crisp. Drain. Melt butter or margarine in deep or shallow fry pan set on low to medium heat. Sauté apples gently for 5-6 minutes, add cauliflower and increase temperature, sauteeing apples and cauliflower together until lightly browned. Sprinkle with salt and pepper to taste. Pour the lemon juice into the pan and quickly toss the vegetables in butter and lemon juice mixture. Serve very hot.
