8-10 small potatoes, peeled and cut into 5mm (1/4 inch) rounds coarse salt
Preheat oil for deep frying. Place dry chips into frying basket and lower into hot oil, shake gently to keep apart, fry until tender but not brown. Remove from oil and drain. Allow oil to reheat before cooking a further batch or finishing chips for serving. Cook chips until crisps until brown, drain on absorbent paper and sprinkle with coarse salt.
Note: All chips can be precooked early in the day and finished when ready to serve. Commercially frozen chips can be cooked straight from deep freezer.
