Fried Cabbage Recipe

This is good way to convert the anti-cabbage brigade. Even small children who won't touch any vegetables have been persuaded to eat it. Mind you, it is difficult to pick out the apples and raisins without eating some of the cabbage.

 

30g (1 oz) butter or margarine

1 onion, chopped

1 large Granny Smith apple, peeled, cored and roughly chopped

1/2 large or 1 small white cabbage, shredded

1/4 cup seedless raisins

salt and pepper to taste

 

Melt butter in deep or shallow fry pan on moderate heat, add chopped onion and fry for 2 minutes, add apple and cook for 1 minute. Add cabbage and raisins and season well with salt and pepper. Stir all ingredients together, raise temperature and stir fry for 6-8 minutes or until cabbage is lightly cooked but still crisp. Serve hot with grills and roasts.
