Cauliflower Puffs Recipe

1 small or 1/2 large cauliflower, divide into florets

salt

freshly ground black pepper

1 quantity Beer Batter

 

Prepare batter in advance. Wash cauliflower florets carefully and put into a large pan of well salted boiling water. Cook until just tender, about 5 minutes. Drain and leave to get cold. When ready to cook, preheat oil in deep fryer. Season cauliflower well with black pepper, dip florets into batter a few at a time, shake off excess and fry until well puffed and golden. Drain on absorbent paper and serve hot.
