Tomato and Apple Chutney Recipe

Makes approx. 1.5 kg (3 1b)

 

You will need:-

2 tablespoons water
500 g (1 lb) Granny Smith apples, peeled, cored and sliced
500 g (1 lb) tomatoes, sliced

250 g (½ lb) onions, chopped
1 clove garlic, chopped
125 g (4 oz) sultanas
1¼ cups brown sugar
7 g (¼ oz.) mustard seed, tied in muslin bag
2 teaspoons curry powder

½ teaspoon cayenne pepper

1¾ cups brown vinegar

paraffin wax to seal

 

Cooking Time:- depends on ripeness of fruits

 

Set fry pan on low and gently stew apples with water until tender. Add the remaining ingredients to the pan, bring to the boil. Reduce heat again to simmer and cook, stirring occasionally. until fruits have amalgamated and the consistency is thick. There should be no excess liquid. Discard muslin bag. fill hot sterilized jars with chutney, seal with melted wax.
