Light Batter Recipe

You will need:-


125 g (4 oz) flour
½ teaspoon salt
3 tablespoons oil
1¼ cups lukewarm water

1 egg white


Sieve flour and salt into a bowl. Stir in oil and gradually add the lukewarm water. Stir to a smooth cream and leave to stand for 2 hours if possible, but at least 30 minutes. Before using fold in the stiffly beaten egg white.


Note: The batter can be made well in advance and the egg white added just before use.
