Green Tomato Chutney Recipe

Makes approx. 1.5 kg (3 1b)

 

You will need:-

500 g (1 lb) Granny Smith apples, peeled, cored and minced
125 g (4 oz) onions. minced
1.5 kg (3 lb) green tomatoes, thinly sliced

125 g (4 oz) brown sugar
3 teaspoons salt
¾ cup dark vinegar
7 g (¼ oz) piece dried ginger root

¼ teaspoon cayenne pepper
½ teaspoon dry mustard
paraffin wax to seal

 

Cooking Time:- depends on ripeness of fruits

 

Put all ingredients in fry pan set on low to medium temperature and bring slowly to boil. Reduce temperature to simmer and cook uncovered until the ingredients are tender and of a thick consistency. There should be no excess liquid. Discard ginger root, fill hot sterilized jars with chutney, seal with melted paraffin wax.
