Fondant Icing Recipe

You will need:-

1½ cups sugar, castor or granulated
2 egg whites
2 tablespoons lemon juice
3 tablespoons water

 

Stand an ovenproof mixing bowl in fry pan containing 2.5 cm (1 inch) boiling water. Add ingredients to bowl and beat together for 10 minutes or until mixture looks like meringue. Remove bowl from pan and beat for a further 5 minutes. Spread icing over marzipan-coated cake and using a palette knife, stipple icing until it has a snowy appearance.


Note: Use 185 g (6 oz) commercial marzipan to coat top of cake. 185 g will cover top of 23 cm (9 inch) cake. To cover sides as well use double quantity.
