Bigarade Sauce Recipe

This is absolutely favorite sauce for duck.

 

You will need:-

1 tablespoon sugar

1 tablespoon vinegar

2 tablespoons brandy

juice of 3 oranges

juice of 1 lemon

grated rind of 1 orange

1 tablespoon corn flour

 

Melt the sugar in a small pan with the vinegar and heat until it is thick, being careful not to burn it. Add brandy and juices, reduce heat and simmer for 4 or 5 minutes. Drain excess fat from pan that duck was cooked in. Add grated rind and the vinegar sauce to pan juices, stir well. Mix the corn flour with a little water and add to the pan juices, stirring constantly. If there is insufficient juice to make the sauce a coating consistency, add a little stock. Adjust seasoning and serve a little on the duck and the rest separately.
