Vegetable Soup Recipe

You will need :-

250 g (1/2 lb) dried haricot beans or mixed soup beans

60g (2 oz) butter  

1 large onion, diced                        

250 g (1/2 lb) green beans trimmed  and cut into 1 cm (1/2 inch) pieces

4 medium potatoes, peeled and cut into 1 cm (1/2 inch) pieces

2 cloves garlic, crushed

2 large potatoes, peeled, seeded and chopped

2 stalks celery, cut into 1cm (1/2 inch) pieces 10 cups water

salt and pepper

6 bacon rinds, optional

2 tablespoon tomato paste

1/2 cup short macaroni

                              

Cooking Time : - 1 1/4 hours                              

 

Soak beans in water for several hours, then drain. Melt butter in fry pan on low heat, add beans and all the vegetables. Stir vegetables into the butter and sauté very gently, without browning, until they are beginning to soften, approx. 10 minutes. Add cold water, salt and pepper, cover and simmer gently for about 50 minutes, with the bacon rinds if used. Mix tomato paste and olive oil together and add to soup with macaroni. Continue cooking until macaroni is just tender.

 

Pour soup into heated tureen and serve with hot crusty French bread. Serves 4-6.
