Quick Chicken Soup Recipe

You will need :-

1 chicken joint

1 oz. butter

1 small onion, chopped

2 teaspoons flour

1 pint water

1 chicken stock cube

salt and pepper

juice of 1/2 lemon

slices of toast cut into very small squares (sippets)

2 teaspoons chopped parsley

 

Preparation Time :- 15 minutes

 

Cooking Time :- 25 minutes

 

Fry the chicken in butter for 10 minutes. Drain and cut off all the meat. Fry the onion in remaining butter until transparent. Add the flour, mix well and cook for 2-3 minutes. Gradually add the water, bring to the boil, stirring until thickened. Add stock cube and chicken pieces.

 

Return the chicken bones to the pan, season well and add lemon juice. Cover the pan and cook for 10 minutes longer. Meanwhile make the sippets of bread.

 

Remove the chicken bones. Check seasoning, adding more if required. Pour soup into shallow soup plate and serve sprinkled with sippets of bread and parsley. Serves 4.

 

Quick Tip

 

To give a more attractive appearance, the croutons can be cut into fancy shapes with such as hearts and diamonds, by using very small cocktail cutters.
