Gazpacho Soup Recipe

Zest up your dinner with this spicy starter of Spanish origin. Fill little bowls with the accompaniments and spoon them, to taste , onto the chilled soup. Or you might try serving it buffet style.

 

You will need :-

1.5 cups tomato juice

1 beef bouillon cube or 1 teaspoon instant beef bouillon

1 tomato, chopped

1/4 cup chopped unpared cucumber

2 tablespoons chopped green pepper

2 tablespoons chopped onion

2 tablespoons wine vinegar

1 tablespoons salad oil

1/2 teaspoon salt

1/2 teaspoon Worcestershire sauce

3 drops red pepper sauce

Accompaniments

 

Heat tomato juice to boiling. Add bouillon cube; stir until dissolved. Stir in remaining ingredients except accompaniments; chill several hours.

 

Serve with accompaniments: herbed croutons and about 1/3 cup each chopped tomato, unpared cucumber, green pepper and onion. 5 servings (1/2 cup each).
