Bacon and Dumpling Soup Recipe

You will need :-

2 onions

2 carrots

1 parsnip

2 pints water

12 oz. collar or fore hock bacon, soaked for 4 hours

1 bay leaf

½ cabbage heart

salt and pepper

For the dumplings:-

4 oz. self raising flour

4 oz. pork sausage meat

 

Preparation Time:- 15 minutes

 

Cooking Time:- 1 hour

 

Cut onions into rings and carrots and parsnip into strips. Put into cold water with bacon and bay leaf. Bring to boil and simmer for 40 minutes.

 

Remove bacon and cut into dice. Return to pan with finely shredded cabbage heart and bring to the boil.

 

Sieve flour and mix with sausage meat. Form into 12 small balls. Place in boiling soup, cover and simmer for 15 minutes. Taste and season. Serves 6.

 

Quick Tip

 

Simmer bacon bones in stock or water with herbs and seasoning. This forms an excellent basis for many delicious soups.
