Vanilla Slices Recipe

You will need :-

1 x 7½ oz. packet frozen puff pastry

6 oz. icing sugar, sieved

water to mix

red coloring

2 tablespoons jam

¼ pint double dairy cream, lightly whipped

few drops vanilla essence

 

Preparation Time:- 25 minutes

 

Cooking Time:- 12 minutes

 

Oven Setting:- 425°F; Gas Mark 7

 

Roll pastry out thinly and cut into 2 strips, 3 inches x 12 inches. Place on a damp baking tray and bake in a hot oven for 12 minutes or until well risen and cooked. Allow to cool.

 

Mix icing sugar with water to a coating consistency and color pale pink. Turn one pastry slice upside down and spoon over icing.

 

Spread remaining slice with jam. Spread cream, flavored with vanilla essence, over jam. Top with iced slice. Cut into 8 slices. Serves 4.

 

Quick Tip

 

When using frozen puff pastry, it is not necessary to leave the pastry to 'rest' before baking as you do with fresh pastry. This does not apply to ready-made pastry which is refrigerated but not frozen.
