You will need :- 1 bunch spring onions 1 12 oz. can corn niblets 1 12 oz. can luncheon meat 1 oz. lard or dripping salt and pepper to taste 4 slices white bread
Preparation Time:- 10 minutes
Cooking Time:- 10 minutes
Trim and finely chop the spring onions, reserving a few for decoration. Drain corn niblets. Dice the luncheon meat, fry gently in the lard until brown on all sides. Stir in the corn niblets and chopped onions. Season to taste.
Heat through and turn into a warm serving dish.
Meanwhile, toast the bread, trim, cut into triangles and use to surround the dish (see Quick Tip below). Decorate with reserved spring onions. Serves 4.
Quick Tip
To make toast triangles: remove all crusts from toast leaving a square. Cut across corner to corner twice. Each slice make four triangles.
