Sausage Beanfeast Recipe

You will need :-

1 bunch spring onions

1 4 oz. can pineapple rings

1 lb. pork sausages

½ oz. butter

1 16 oz. can baked beans with tomato sauce

2 dessertspoons vinegar

salt and pepper to taste

 

Preparation Time:- 5 minutes

 

Cooking Time:- 15 minutes

 

Wash the spring onions and chop. Halve 3 pineapple rings and reserve 5 halves, chop the rest. Grill the sausages until golden brown on all sides (see Quick Tip below). Reserve 5 and slice the rest.

 

Lightly fry the onions and chopped pineapple in the butter until tender. Add baked beans and the sliced sausages, vinegar and seasoning. Simmer for 5 minutes. Meanwhile fry the pineapple halves.

 

Pour baked bean mixture into servings dish. Decorate with the whole sausages and fried pineapple halves. Serves 4.

 

Quick Tip

 

To ensure that sausages keep their shape and do not split, first put in cold water and bring to the boil; immediately drain well. Then grill or fry the sausages in the normal way.
