Salmon and Sweetcorn Salad Recipe |

You will need :- 3 large carrots 1 7 oz. can red salmon 1 7 oz. can sweetcorn kernels 1 cucumber 1 small sweet green pepper 4 tablespoons mayonnaise or salad cream 2 tablespoons lemon juice
Preparation Time:- 20 minutes
Scrape carrots, make the carrots curls (see Quick Tip below) and grate the remainder of the carrots. Drain salmon and break up into bite-size pieces with a fork. Drain the sweetcorn. Wipe the cucumber and slice thinly. Wipe the pepper and remove stalk and seeds. Reserve 3 slices and chop the rest finely.
Mix the salmon, sweetcorn, grated carrot and pepper lightly together. Line a salad bowl with overlapping cucumber slices. Pile up the salmon mixture in the centre.
Thin the mayonnaise with the lemon juice. Pour over the salmon mixture. Decorate with carrot curls and pepper slices. Serves 4.
Quick Tip
Making carrot curls; choose a large carrot. Remove thin slices with potato peeler. Curl and skewer with pin. Leave in cold water until required. Remove pin before serving.
