Rosy Egg Mayonnaise Recipe

You will need :-

8 hard boiled egg

1 level tablespoon bottled tomato sauce

¼ pint mayonnaise

1 7 oz. can anchovies

1 cucumber

4 medium tomatoes

pinch sweet paprika pepper

few sprigs parsley

 

Preparation Time:- 20 minutes

 

Cool eggs under running water and shell them. Blend the tomato sauce with the mayonnaise. Drain oil from anchovies. Wipe and slice cucumber thinly. Make tomatoes into waterlilies (see Quick Tip below).

 

Slice eggs in half lengthwise, arrange cut side down on overlapping circles of cucumber slices. Coat each egg with a spoonful of mayonnaise. Cut each anchovy fillet in half and arrange over the eggs. Sprinkle paprika pepper over the top.

 

Arrange tomato waterlilies decorated with parsley round the serving dish. Serves 4.

 

Quick Tip

 

Making tomato waterlilies: make zigzag cuts through centre of tomato using a sharp pointed knife. Pull halves apart gently. Make 7 points.
