Piquant Herring Salad Recipe

You will need :-

4 pickled herrings

1 small onion

1 eating apple

2 teaspoons lemon juice

¼ pint soured dairy cream or double dairy cream

1 teaspoon lemon juice

salt and pepper

For the garnish:-

1 small beetroot, peeled

 

Preparation Time:- 15 minutes

 

Drain the herrings. Cut each herring in half lengthways and then cut each half into 4 strips.

 

Slice onion into fine rings. Cover with boiling water and drain after 1 minute. Core and slice apple and sprinkle slices with lemon juices. Reserve a few apple slices for garnish.

 

Blend herring, reserving a few pieces for garnish, onion rings, apple slices and cream. Season to taste with salt and pepper. Arrange on a serving dish and garnish with herring pieces and apple and beetroot slices. Serves 4.

 

Quick Tip

 

To pickle herrings, bone, clean and soak in brine for 2 hours. Pack into a wide necked jar, pour over spiced vinegar and cover. Leave for at least 5-6 days.
