Pears with Cream Cheese Balls Recipe

You will need :-

3 oz. flaked almonds

8 oz. cream cheese

4 ripe pears

juice 1 lemon

4 tablespoons mayonnaise

1 tablespoon tomato ketchup or puree

1 tablespoon cream

dash of Tabasco sauce

dash of Worcestershire sauce

salt and pepper to taste

1 lettuce

 

Preparation Time:- 15 minutes plus 1 hour to chill

 

Chop and toast the almonds. Form the cream cheese into small balls and roll in chopped, toasted almonds. Chill for 1 hour.

 

Peel, core and halve the pears, brush liberally with lemon juice, to prevent discoloration (see Quick Tip below). Combine the mayonnaise, ketchup or puree, cream, Tabasco, Worcestershire sauce and seasoning.

 

Shred outer leaves of lettuce and place in centre of serving dish. Quarter the heart and place on top. Pile the cheese balls on to the pear halves, and arrange round the lettuce.

Serve with the spicy mayonnaise sauce. Serves 4.

 

Quick Tip

 

Preventing discoloration: if fresh rip pears are used sprinkle with lemon juice immediately after peeling to preserve color. The same method can be used to preserve apple slices.
