You will need :- 4 oz. good liver sausage 6 eggs ¼ pint double dairy cream salt and pepper For the garnish:- paprika pepper
Preparation Time:- 5 minutes
Cooking Time:- 25 minutes
Oven Setting:- 350°F; Gas Mark 4
Lightly butter 6 ramekin dishes. Cut liver sausage into 6 slices and place in bottom of dishes. Stand in a roasting tin of hot water, cover completely with foil and place in a moderate oven for 10 minutes (see Quick Tip below).
Remove from oven and break an egg into each dish, top with a good tablespoon of cream and season with salt and pepper.
Bake, uncovered, for about 15 minutes or until egg whites are set and yolks are still soft. Garnish with paprika. Serves 6.
Quick Tip
If the individual dishes are heated before the eggs are added the whites will set quickly and will not become 'rubbery'.
