Danish Dressed Salad Recipe |

You will need :- 2 oz. Danish blue cheese 6 tablespoons salad oil 4 tablespoons lemon juice 1 level teaspoon sugar 2 level teaspoons salt 4 oz. mild Cheddar Cheese 1 medium onion 1 celery heart few lettuce leaves 8 thin slices breakfast sausage or salami
Preparation Time:- 20 minutes
Crumble up the blue cheese and put in a screwtop jar with oil, lemon juice, sugar and salt. Screw on lid and shake well. Chill, if possible.
Cut Cheddar cheese into ½-inch dice. Peel and grate or very finely chop the onion. Clean and roughly chop the celery. Mix all together. Wash and drain lettuce leaves. Line salad bowl with lettuce. Put in cheese mixture.
Pour dressing over. Decorate with sausages cones which are made by cutting half across a slice of sausage from edge to centre. Curl around one cut edge over the other to form a cone. Arrange two together at intervals round the salad bowl. Severs 4.
Quick Tip
To make a quick dressing: put oil and vinegar and seasoning in a screwtop jar-an empty mustard jar is ideal. Shake vigorously for about one minute or until oil has emulsified.
