Chicken Waldorf Salad Recipe

You will need :-

4 red-skinned apples

2 tablespoons lemon juice

4 celery sticks

8 oz. cold chicken, diced

2 oz. walnuts, halved

1/4 pint mayonnaise or salad cream

1 large lettuce

8 oz. peas, cooked

 

Preparation Time :- 15 minutes     

 

Core and slice the apples and sprinkle with lemon juice. Reserve 12 slices for decoration and dice the rest.

 

Clean and chop the celery. Wash and drain lettuce, chop heart and mix with the diced chicken, chopped apple, celery, walnut halves and the mayonnaise. Line salad bowl with outer lettuce leaves and pile in salad.

 

Decorate with piles of peas divided by apple slices round the edge.

 

Basic Mayonnaise: Beat 1 teaspoon castor sugar, and 1/2 level teaspoon each of salt, pepper and dry mustard into 2 egg yolks. Add 1 teaspoon tarragon or wine vinegar or lemon juice. Pour 1/2 pint olive or corn oil into a measuring jug. Beat in a few drops at a time until sauce begin to get pale and thick, then increase the flow, beating all the time. Halfway through the process, thin with 1 tablespoon of vinegar or lemon juice. Serves 4.

 

Quick Tip

 

To improve salads: cut a garlic clove and rub the inside of the salad bowl with the cut surface. This will give a subtle garlic flavor.
