Chicken Liver Savoury Recipe

You will need :-

8 oz. long grain rice

1 large onion

1 lb. chicken livers

1 oz. butter or margarine

2 tablespoon corn or olive oil

4 oz. button mushrooms

salt and pepper to taste

1 oz. extra butter

1 tablespoon chopped parsley

 

Preparation Time :- 5 minutes

   

Cooking Time :- 15 minutes

                                    

Cook the rice in plenty of boiling salted water until just tender (about 12 minutes). Drain in a colander, carefully pour through fresh hot water to separate the grains.

 

While rice is cooking, peel and finely chop onion (see Quick Tip below). Slice mushrooms, reserving a few for decoration. Cut chicken livers into bite-size pieces, discarding any stringy membranes. Melt 1 oz. fat and the oil; cook onion gently until transparent but not brown. Add chicken livers and sliced mushrooms, stirring occasionally for 10 minutes or until livers are cooked; season to taste.

 

Return rice to the saucepan, reheat gently, stirring in chicken mixture lightly to blend. Toss reserved mushrooms in melted extra ounce of butter for 1 minute. Adjust seasoning if necessary. Serve the savoury piled in a hot dish decorated with mushrooms and parsley. Serves 4.

 

Quick Tip

 

To chop onion : cut peeled onion in half. Place flat side on board and hold at stalk end with a fork. Slice finely first lengthwise then across. Rinse hands in cold water immediately, or the smell will cling to them.
