You will need :- 8 oz. short crust pastry 1 lb. leeks 1 oz. butter or margarine 1 oz. plain flour ½ pint milk salt and pepper to taste 1 level teaspoon made mustard 4 oz. strong Cheddar cheese, grated
Preparation Time:- 15 minutes
Cooking Time:- 25 minutes
Oven Setting:- 375°F; Gas Mark 5
Line a flan tin with the rolled out pastry, or use a fluted flan ring (see Quick Tip below). Bake 'blind' for 15 minutes in a moderately hot oven, then remove the paper and weights, and return to oven for a further 10 minutes.
Cut the leeks across in ¼-inch rings and wash well. Melt ½ oz. butter and add the leeks, cover and cook over a moderate heat for 3 minutes only (sufficient water will adhere to leeks from washing to prevent them burning).
Meanwhile, melt the remaining butter, stir in the flour over a gentle heat until completely absorbed. Add the milk and cook, stirring, until sauce is smooth and thick. Season to taste and stir in the mustard and grated cheese. As soon as cheese is melted, stir in leeks. Pour mixture into warm flan case and serve at once. Serves 4.
Quick Tip
Lining a fluted flan ring: work pastry carefully into each flute. Allow the rough edges to fall over the edge and with a sharp stroke of the rolling pin, roll across the ring. This will make a clean cut of the edges.
