Cheese and Pineapple Snack Recipe

You will need :- 

1 bunch radishes

1 8.75 oz. can pineapple chunks

1 2.50 oz. can red pimentoes

8 oz. cream cheese

salt and pepper to taste

1 small French loaf

2 oz. butter 

1 heaped teaspoon caraway seeds

1 bunch watercress

 

Preparation Time :- 20 minutes

    

Top and tail radishes and make radish roses (see Quick Tip, recipe Chicken Aspic Towers). Drain the pineapple chunks and cut into small pieces, reserving juice. Drain pimentoes an chop roughly. Beat 2 tablespoons pineapple and pimentoes. Season to taste. Chill, if possible.

 

Make caraway bread (see Quick Tip below). When bread is ready, pile cheese mixture into one serving bowl, with the radish roses and watercress, in another.

 

Serve hot bread straight from foil wrapper. Everyone helps himself to portions of the cheese dip and the bread. Serves 4.

 

Quick Tip

 

Making caraway bread: add 1 teaspoon caraway seeds to 3 oz. butter, blend well. Slice French bread at 0.5-1 inch intervals without cutting right through and butter well with the caraway butter. Wrap in foil. Heat in hot oven for 10-15 minutes.
