Sweet 'n' Sour Pork Recipe

You will need :-

12 oz. belly of pork

2 oz. plain flour

1 tablespoon oil

1 egg white

2¾ oz. tin frozen orange juice

1 tablespoon brown sugar

3 tablespoons vinegar

1 tablespoon soy sauce

1 fresh orange

salt and pepper

2 teaspoons corn flour

10-12 oz. boiled long grain rice

 

Preparation Time :- 20 minutes

 

Cooking Time :- 20 minutes

 

Remove rind from pork and cut flesh into neat cubes. Mix flour, oil and 5 tablespoons water to a smooth paste. Season to taste. Whisk egg white until stiff and fold into the flour mixture using a metal spoon. Dip each piece of pork in batter and fry in hot, deep fat for a few minutes until golden brown and crisp. Drain on kitchen paper.

 

Put orange juice, sugar, vinegar and soy sauce into a small pan. Heat gently, adding enough water to make up to ½ pint. Thickly peel orange, cut into segments and add to the sauce with salt and pepper to taste.

 

Mix corn flour to a smooth paste with a little cold water, add to the sauce and bring to the boil, stirring until thickened. Pile pork into a bowl., pour sauce over and serve with a bowl of plain boiled rice and chutney. Serves 4.

 

Quick Tip

 

After cooking rice, place in a colander and pour hot water over to separate and loosen the grains. If the pork and sauce is not quite ready, put the rice on a dish in the oven to keep hot.
