You will need :- 4 tablespoons oil 2 large onions, chopped 2 stalks celery, cut into 1 cm (˝ inch) pieces 2 cloves garlic, crushed ˝ cup seedless raisins ˝ cup currant 2 cups long grain rice 8 cups boiling water 2 teaspoons salt 2 cups cooked lamb or chicken, diced 2 oz. pine nuts sour cream or natural yoghurt to serve
Cooking Time:- 10 minutes
Set fry pan on medium heat with 2 tablespoons of the oil. Sauté onions and celery for 2 minutes, add garlic, raisins and currants. Cook, stirring occasionally for 3 minutes. Remove mixture from pan and reserve. Add remaining oil to pan and when hot add rice. Stir for a few minutes until rice begins to change color. Pour over boiling water, add salt and cook very quickly with pan covered for 7-8 minutes. Remove cover and finish cooking rice, about 5-6 minutes, forking through occasionally until rice is just cooked. All the water should have been absorbed by this time. If it looks as though there is going to be excess water, fold a clean tea towel into four and lay over the rice for the last 2 minutes for cooking. Stir meat, pine nuts and vegetable mixture through the rice, turning until very hot.
Serve immediately with sour cream or yoghurt handed round separately.
