Rice Salad Recipe

You will need :-

8 oz. cooked long grain rice

salt and pepper

1 tablespoon oil

2 oranges

1 clove garlic

8 oz. cooked tongue

2 heads chicory

 

Preparation Time :- 20 minutes

 

Put the rice into a large bowl. Season well with salt and pepper. Put the oil into a small bowl. Peel the oranges thickly and cut the flesh into segments, add to the oil. Crush the garlic and add to the orange mixture. Season and mix well.

 

Cut meat into neat cubes and add to the rice. Toss well. Cut one head of chicory into thin slices, so that when it separates it becomes small crescent shapes. Add to the rice with the orange mixture and mix well.

 

Arrange remaining chicory leaves around edges of a salad bowl and pile salad in the centre. Garnish with more fresh orange slices if liked. Serves 4.

 

Quick Tip

 

For extra speed or if oranges are out of season: use tinned mandarin oranges and pour a little lemon juice over the slices to give a sharper flavor.
