Rice Imperial Recipe

You will need :-

4 oz. Carolina rice

1 pint milk

1 oz. castor sugar

1 large tin pears

1 tablespoon arrowroot

few drops green coloring

few drops pink coloring

angelica, cut into diamond shapes

 

Preparation Time:- 10 minutes

 

Cooking Time :- 30 minutes

 

Put rice and milk into a large saucepan with sugar, bring slowly to the boil, stirring occasionally. Cover and simmer for 30 minutes or until all milk has been absorbed and rice is tender. Turn rice into a greased 8 inch round sandwich tin, press and cool. Set and invert on to a flat serving dish.

 

Drain pears and keep the juice. Place pears, cut side down, on a wire rack. Blend arrowroot with a little of the juice. Add the rest and bring slowly to the boil, stirring until thickened. Put half into a bowl and add a little pink coloring, color the other half pale green.

 

Coat half the pears green and half pink. When set arrange them on top of the flat rice mould and garnish with angelica. Serve very cold. Serves 4.

 

Quick Tip

 

To coat the pears professionally: place a piece of foil beneath the wire cooling rack. The foil will catch any surplus coating which will be left behind when transferring the pears to the rice mould.
