Old Fashioned Rice Pudding Recipe

You will need :-

3-4 oz. Carolina rice

1 pint milk

2 oz. castor sugar

1 oz. butter

pinch ground nutmeg

 

Preparation Time :- 5 minutes

 

Cooking Time :- 2 hours

 

Oven Setting :- 325°F; Gas Mark 3

 

Grease a 2 pint pie dish. Then put in rice, milk and sugar. Stir well and dot the top with butter. Bake in centre of preheated oven for 2 hours.

 

Sprinkle top with grated nutmeg after 1 hour.

 

If a richer pudding is desired, add ¼ pint single cream or small tin evaporated milk. Serves 4.

 

Quick Tip

 

To make this really rich and creamy tasting: if any skin forms from the milk during the first hour of cooking, stir it into the rice with a fork before sprinkling with nutmeg, and continue the slow cooking.
