Bacon Savory Rice Recipe |

You will need :- 2 oz. butter 6 rashers bacon 4 oz. mushrooms 1 small onion 8 oz. long grain rice salt and pepper watercress
Preparation Time:- 15 minutes
Cooking Time :- 25 minutes
Melt butter in a large saucepan. Remove rinds from bacon and chop two rashers into small pieces, cut remaining rashers in half and roll tightly. Fry all the bacon in butter until crisp. Remove the rolls and keep to one side. Wash and slice the mushrooms and fry in remaining butter. Remove mushrooms and bacon pieces and put to one side.
Peel and finely chop the onion. Fry with the rice for 10 minutes in remaining butter. Add 1 pint water, salt and pepper. Bring slowly to the boil and simmer for 15 minutes, or until the rice is tender and the water absorbed. Return mushrooms and bacon pieces, mix well.
Put rice on to a serving dish and garnish with bacon rolls, mushrooms and watercress. Serves 4.
Quick Tip
For a special treat at breakfast: if there is any left over cold cooked rice, this dish can be prepared by quickly cooking the bacon and mushrooms, then frying the chopped onion and adding the ready cooked rice. Heat through and serve.
