Turkey Risotto Recipe

You will need :-

1 lb. cooked turkey meat

2 oz. butter

2 onions, chopped

1 tablespoon curry powder

1 level teaspoon mixed herbs

salt and pepper

dash garlic salt

½ lb. Patna rice

1 chicken stock cube

¾ pint water

1 oz. stuffed olives, sliced

frozen or canned peas

frozen quarters

 

Preparation Time:- 15 minutes

 

Cooking Time:- 45 minutes

 

Cut the meat into neat pieces. Melt the butter in a large saucepan, fry onion until transparent. Add curry powder, herbs, salt, pepper and garlic salt. Mix well and cook for 3 minutes. Add rice, mixing well.

 

Mix stock cube in water, pour over rice, bring to the boil, cover and cook for 35 minutes or until the rice has absorbed all the liquid. Add the turkey and olives. Stir thoroughly and heat gently for 5 minutes.

 

Arrange the risotto on a large platter, surround with cooked peas, and garnish with tomato quarters. Serves 4.

 

Quick Tip

 

When cooking rice, use approximately double the amount of water to rice. A measuring jug is extremely helpful in doing this.
