Turkey in Aspic Recipe

You will need :-

1 lb. cooked turkey breast

4 oz. Danish pate de foie

1 small tin mandarins, drained

1 pint aspic jelly

few cucumber slices

few sprigs watercress

 

Preparation Time :- 20 minutes

 

Cut the turkey breast into meat slices. Spread each slice with pate. Arrange the mandarins and turkey in a pattern over the base of a shallow tin. Pour over a little cold aspic and allow to set.

 

Pour on the rest of the aspic, mixed with any surplus turkey and mandarins. Allow to set.

 

Remove jelly from tin on to a serving dish. Serve garnished with cucumbers slices and watercress. Serves 4.

 

Quick Tip

 

Aspic sets more quickly in a metal container than in a china bowl. The metal container placed in a bowl of ice will make the aspic set even quickly.
