Terrine of Duck Recipe |

You will need :- 1 fresh duck (4-5 lb.) salt and pepper 1 level teaspoon mixed herbs 8 oz. lean pork 4 oz. pork fat 1 small onion, chopped 1 egg juice of 1 orange few bay leaves few orange slices
Preparation Time:- 30 minutes
Cooking Time :- 1-1.5 hours
Oven Setting :- 375ºF; Gas Mark 5
Skin duck, remove breast meat in thin slices and bone the rest of the duck. Mince the meat (except the slices). Season well. Mince the pork and fat, mix with the minced duck meat, onion, egg and orange juice. Beat until evenly blended.
Press half the mixture into well-greased straight sided oven-proof dish, lay the sliced meat on top and cover with the rest of the minced meat. Press firmly. Cover the dish and stand in a shallow tin half filled with hot water. Bake in the centre of the oven for 1-1.5 hours.
Cover meat with foil and press gently as it cools, to exclude all air bubbles. Serve cold from the dish garnished with bay leaves and orange slices. Serves 4.
Quick Tip
To press the meat evenly, cover it with aluminum foil and then a flat object such as a board. Put a heavy weight on top to press the meat into a good flat shape.
