You will need :- 2 chicken joints salt and black pepper juice of ½ lemon fee sprigs fresh tarragon or parsley 4 oz. butter 6 orange wedges 1 lettuce, shredded
Preparation Time:- 20 minutes plus setting time
Cooking Time:- 15 minutes
Season the chicken with salt and pepper. Grill for 15 minutes, turning frequently. Cool, remove all the meat and mince it finely.
Add the lemon juice and tarragon or parsley, reserving 1 sprig for the garnish. Check the seasoning. Pound the meat mixture until smooth and creamlike. Work in half the butter. Divide the mixture into small, ramekin dishes or foil container (see Quick Tip) and leave until quite cold.
Melt remaining butter and pour a little over each one. Leave to set. When cold, serve turned out on bed of lettuce and garnished with orange wedges and tarragon or parsley. Serves 4.
Quick Tip
If no suitable moulds are available, make foil ones. Place a double thickness of foil over the base of tumbler and press foil down the sides. Remove and use as required.
