Piquant Chicken Casserole Recipe

You will need :-

2 tablespoons oil

1 oz. butter

4 chicken joints

1 large onion

2 tablespoons plain flour

salt and pepper

4 tablespoons red wine

½ stock or water

4 oz. mushrooms, sliced

15½ can baked beans in tomato sauce

 

Oven Setting:- 375°F; Gas Mark 5

 

Heat the oil and butter in a flameproof casserole and fry the chicken joints until  golden brown. Take out of the casserole. Slice the onion and fry in the fat until soft and golden. Work in the flour and seasoning, wine and stock, and bring to the boil. Cook for 3 minutes. Return the chicken to the casserole and cover. Bake in a moderate oven (375°F; Gas Mark 5) for 1 hour. Add the mushrooms and baked beans for 20 minutes before serving.
