Pimento Turkey Recipe

You will need :-

1 lb. cooked turkey meat

1 oz. butter

2 onions, sliced

1 small can pimentoes

1 chicken stock cube

1 pint hot water

salt and pepper

1 teaspoon cornflour

 

Preparation Time : - 10 minutes

 

Cooking Time : - 20 minutes

 

Cut the turkey meat into neat pieces. Melt butter and fry onion until transparent. Drain the pimentoes and cut into strips. Add to the onion and cook for 5 minutes.

 

Dissolve stock cube in water, add to pan and bring to the boil. Reduce the heat and simmer for 10 minutes. Season well.

 

Mix the cornflour to a smooth paste with a little cold water, add to pan and stir until thickened. Add the turkey meat and heat through. Arrange in a serving dish with the sauce poured over. Serves 4.

 

Quick Tip

 

If pimentoes are not available, use as an alternative two aubergines, sliced, or four courgettes, cut into thin slices or strips.
