You will need :- 6 jointed chicken legs salt and pepper 4 tablespoons oil 12 oz. tin pineapple pieces 2 teaspoons soy sauce 2 teaspoons Worcester sauce 1 teaspoons arrowroot 1 red pepper 1 green pepper
Preparation Time:- 10 minutes
Cooking Time:- 30 minutes
Season the chicken well. Heat the oil in a large frying pan, add the chicken and cook for 10 minutes.
Drain the pineapple, add the pieces to the chicken with the soy sauce and Worcester sauce. Mix the arrowroot with a little of the juice until smooth, add the rest and add to the pan. Bring to the boil, stirring until slightly thickened. Cook for 20 minutes, stirring occasionally.
Arrange the chicken on a hot serving dish, pour the sauce over and garnish with strips of red and green pepper. Serves 4.
Quick Tip
To seed pepper: first cut off top. Then run the point of a knife round the inside. The seeds and core will then lift out easily.
