Juniper Chicken Recipe

You will need :-

6 chicken pieces

1 oz plain flour

salt and pepper

3 oz. butter

¼ pint dry vermouth

¼ milk

¼ single cream

12 juniper berries

 

Oven Setting:- 375°F; Gas Mark 5

 

Coat the chicken pieces in the flour seasoned with salt and pepper, then cook them until golden in the butter. Put into a casserole and pour over the vermouth, milk and cream with the juniper berries. Cover and bake in a moderately hot oven (375°F; Gas Mark 5) for 30 minutes. Remove the lid and continue cooking for 15 minutes. The sauce will reduce and be thick and delicately flavored with juniper (these berries give flavor to gin). Serve on a bed of crispy fried potatoes, or on plain boiled rice if prepared.
