Italian Chicken Recipe

You will need :-

4 large chicken joints

1 oz. seasoned flour

2 oz. butter

1 tablespoon olive oil

2 rashers lean bacon

6 small onions

1 clove garlic

¼ dry white wine

2 tomatoes

4 oz. mushrooms

1 tablespoon tomato puree

6 tablespoons chicken stock

 

Coat the chicken pieces lightly with the seasoned flour. Melt half the butter with the oil and brown the chicken on all sides. Remove from the fat and keep on one side. Cut the bacon into small pieces and the onions into quarters, crush the garlic. Add the remaining butter to the fat, then cook the bacon, onions and garlic for 10 minutes on low heat. Return the chicken to the pan, add the white wine and cook for 10 minutes. Peel the tomatoes and remove the pips. Add the tomatoes, sliced mushrooms, tomato puree and stock. Bring to the boil, then simmer for about 30 minutes until the chicken is tender. If liked, sprinkle with chopped parsley before serving.
