Duck Casserole Recipe

You will need :-

½ butter

4 bacon rashers

12 small onions

1 duck, prepared

1 tablespoon plain flour

½ pint stock

1 lb. frozen peas

4 lettuce leaves

1 bay leaf

sprig parsley and thyme

½ teaspoon salt

¼ teaspoon pepper

 

Cooking Time:- 350°C; Gas Mark 4

 

Melt the butter and cook the chopped bacon until lightly browned. Add the whole onions and brown well. Put the bacon and onions into a casserole and brown the duck in the remaining fat. Put the duck into the casserole. Mix the flour with the fat and stir and cook until browned. Stir in the stock and cook for 5 minutes. Pour over the duck in the casserole, and add the peas, lettuce leaves, herbs, salt and pepper. Cover and cook in a moderate oven (350°C; Gas Mark 4) for about 1 hour or until the duck is tender.

 

Carve the duck and arrange on serving plate and surround with the peas and onions. Strain the liquor and pour over the duck.
